Our Wine
trust released its first vintage with the 2004 Shiraz and we are
extremely pleased to release our 2005 trust Shiraz.
Trust 2005 Shiraz
Varietal(s): Shiraz, Viognier 1.8%
Appellation: Central Victoria
Vintage: As with the 2004 this was another drought year being the ninth in a row.
The benefit of a drought is harvest timing is not forced by inclement weather and fruit
condition is excellent. As a result the reduced crop levels, due to the dry conditions,
ensured fruit ripeness and good sugar levels.
Winemaking: As with 2004 a similar approach was used with open fermenters and hand plunging.
Small parcels of fruit were crushed to two tonne tubs. The grapes were plunged up to five times per
day. The fruit was allowed to reach 28 degrees Celsius for maximum colour and flavour extraction then
chilled down to 20 degrees to complete fermentation. After ten days on skins the fruit was gently
pressed through a membrane press and within two days transferred to French oak barriques. After 18
months the wines were barrel selected and blended with minimal filtration prior to bottling.
Vineyards: As with 2004, fruit from four vineyards was source however only three of the
previous four were included this year. The new vineyard is dry grown, low yielding with extremely
concentrated fruit, colour and tannin. We have also been fortunate enough to take fruit from this
vineyard in 2006.
Colour: Deep Burgundy
Nose: Mulberries and prune plums with a hint of cinnamon spice.
Palate: Fine textured tannin, chocolate like richness, silky smooth flavour.
A complete wine that lingers on and on.

Food Pairing: BBQ beef fillet skewers marinated in palm sugar, lime, coriander and ginger
with oven roasted vegetables and creamy potato mash.
Trust 2004 Shiraz
Varietal(s): Shiraz, Viognier 4%
Appellation: Central Victoria
Vintage: 2004 was another in a long series of drought years, however good spring rain encouraged
excellent budburst and flowering. Unfortunately however the fruit that set was subsequently reduced by
hot winds in January. A long warm summer allowed for good ripening conditions of a small, but high
quality crop.
Vintage Notes: As this is our first release of trust we have no
prior wines for comparison, however the vineyards that supply fruit to us have
all been producing for over 10 years and have been selected for their disparate,
distinctive attributes. Continuous drought years have given us a good picture
of the potential of each vineyard to produce a specifc style. The blend reflects
our ideal style, which can be described as powerful yet, containing refined aromatics,
that are fragrant, rich and ripe. The palate structure features sweet flavours
tightened with acidity and strengthened by pure fruit extract rounded off by
time in excellent oak.
